Will Not Eat Green Eggs and Ham? Try This Green Egg Recipe Instead!

I’ll tell you more about the funny title of this recipe in a minute. But for now, I want to encourage you to make it if you haven’t already.
First, it takes a mere 5 minutes to prep, and 10 minutes to cook in the oven! I know you are interested in ultra-fast cooking.
You see, I learned that recipe while lounging in a hammock on a Mexican beach. Literally. I already told you about my friend Julien’s idyllic cabanas on the Pacific coast of Mexico and how Mexican breakfast is one of the very best!
Green Eggs Mexicana is ultra-fast if you use a very common store-bought salsa verde. You’ll most likely find salsa verde in the international section of your grocery store. It is made out of green tomatillos, chili peppers, and cilantro. But you don’t have to buy it. Making your own will take you less than 20 minutes, and you’ll have the satisfaction of feeding your family with the best natural ingredients. (Click here for my Salsa Verde Recipe.)
Here is how I do it:
First, you grill the tomatillos and peppers so that they are charred and much softer. That will give a great smoky taste to your salsa.
Then you throw it all in a food processor and blend it well for the salsa.
That’s it. It’s that easy. Delicioso!

Now, about that funny name… If you have children, you probably read to them (or have read to them when they were little). And if you read to them, there is a book you can’t avoid: Green Eggs and Ham by Dr. Seuss. You all know that.
My 3-year old daughter Scarlett loves that book (as does every child in America!). As I was testing my salsa verde and egg recipe in my home kitchen last year, she came up to me and asked what I was making. Green Eggs and Ham, I replied.
